General Health What is a Food Allergy?
A food allergy occurs when a person’s immune system generates an antibody response to an ingested food. This is not the same as a food intolerance, which does not involve the immune system. A food intolerance is usually due to a lack of a certain enzyme that is needed to digest foods correctly.
Some of the symptoms of an allergic response are nasal congestion, coughing, wheezing, itching, shortness of breath, headaches, fatigue, and skin reactions. Although most food allergies are mild, some can cause anaphylactic shock, a serious and sometimes life threatening reaction.
