Delicious Oatmeal Cookies

Here is a yummy but healthy cookie recipe that will warm up a cold winter's afternoon without loading you up with sugar! These cookies are gluten-free if you use GF products, and vegan if you substitute the egg as suggested. If nuts and raisins aren't your thing, you can always substitute them for coconut flakes, chocolate chips, goji berries, dried cranberries (no sugar added), or cacao nibs!

 

Ingredients

1 cup gluten-free oats


1⁄4 cup brown rice flour


1⁄4 cup arrowroot flour


1⁄4 cup pecans, roughly chopped (or other nut)


1⁄4 cup raisins (no sugar added)


1⁄2 cup coconut oil, softened


1/2 cup maple syrup


1 egg  -OR-  2 tbsp ground chia + 1/3 cup warm water 

1/2 tsp baking powder (aluminum free!) 

1/2 tsp cinnamon

 

Directions

  1. Preheat oven to 350 degrees
.
  2. In a bowl, mix together oats, flours, baking powder, nuts, raisins and cinnamon
.
  3. In a separate bowl mix together egg, maple syrup and softened coconut oil
.
  4. Add the wet mixture to the dry and mix thoroughly
.
  5. On a parchment lined baking tray, place dough by the tablespoon and flatten slightly with a fork.
  6. Bake for 13 minutes.
  7. If desired, substitute the raisins and nuts for coconut flakes, chocolate chips, goji berries, dried cranberries (no sugar added), or cacao nibs!
