Here is a yummy but healthy cookie recipe that will warm up a cold winter's afternoon without loading you up with sugar! These cookies are gluten-free if you use GF products, and vegan if you substitute the egg as suggested. If nuts and raisins aren't your thing, you can always substitute them for coconut flakes, chocolate chips, goji berries, dried cranberries (no sugar added), or cacao nibs!
1 cup gluten-free oats
1⁄4 cup brown rice flour
1⁄4 cup arrowroot flour
1⁄4 cup pecans, roughly chopped (or other nut)
1⁄4 cup raisins (no sugar added)
1⁄2 cup coconut oil, softened
1/2 cup maple syrup
1 egg -OR- 2 tbsp ground chia + 1/3 cup warm water
1/2 tsp baking powder (aluminum free!)
1/2 tsp cinnamon

“I am a super sensitive person and I react to most new supplements, medications, and can’t tolerate a variety of foods”. I hear this statement a lot from patients and it is often my first clue that I should be investigating their allergic history.
