Easy Chocolate and Almond Butter Breakfast Cookies

Looking for an easy and delicious breakfast option that is also kid friendly? These cookies are for you! They are rich in blood sugar balancing nutrients and fibre to keep you feeling full all morning. Make a double batch, they keep in the freezer for up to two weeks! 
  • 2 ½ cups gluten free rolled oats
  • ¾ cups gluten free flour
  • ¼ cup raw cacao
  • 2 tbsp. raw pumpkin seeds
  • 1 tbsp. chia seed
  • 1 tsp. baking powder
  • ½ tsp. cinnamon
  • Pinch of Himalayan sea salt
  • ½ cup almond butter
  • ¼ cup maple syrup
  • 1 organic egg
  • 1 tsp. pure vanilla extract

  1. Preheat oven to 350 degrees F.
  2. Line a cookie sheet with parchment paper.
  3. Combine all dry ingredients in a medium sized mixing bowl.
  4. Combine all wet ingredients in a medium sized mixing bowl.
  5. Pour wet mixture into the dry mixture and stir until well combined.
  6. Form 12- 16 cookies (depending on how large you want them).
  7. Bake for 18 minutes.
  8. Allow to cool before eating.
