Gluten Free Blueberry Crisp

Nothing reminds me of spring and summer like a berry crisp. The tartness of the berry combined with the sweet and crunchy topping make this recipe the perfect week day dessert. This recipe is suitable for those who are both dairy and gluten free. Blueberries are rich in phytonutrients and powerful antioxidants making them an excellent food for the prevention of cardiovascular disease.

Base

  • 5 cups frozen or fresh organic blueberries
  • 1 tbsp. lemon juice
  • ¼ cup gluten free flour

Topping

  • ¼ cup coconut oil, melted
  • 1/3 cup packed raw brown sugar
  • ¼ cup gluten free flour
  • ¾ cup certified gluten free rolled oats

  • 1 pinch sea salt

  • Toss blueberries with lemon juice and gluten free flour
  • Place in a 9 x 9 inch pan
  • Combine topping ingredients in a large mixing bowl. Stir until well combined.
  • Evenly spread topping mixture over blueberry mixture.

In walks Katherine (pre-COVID-19). She is a 49-year-old woman coming into my office to try and figure out “what’s wrong with her”. She thinks hormones must have something to do with it because she does not even feel like herself anymore. Her main complaints are sleep problems, mood changes, and weight gain.
